How to Cook Delicious Chicken Noodle Soup

Chicken Noodle Soup


  • Main ingredients: fresh pho noodles, chicken, pork or chicken bones, young eggs, chicken intestines.
  • Additional ingredients: Cinnamon, star anise, cardamom, green onion, red onion, onion, ginger, coriander, lemon, lime leaves, chili and black pepper.


Step 1: Prepare the Ingredients

  • Purple onions, onions, ginger are grilled fragrantly, peeled and washed.
  • Roasted with anise, dried cinnamon, and fragrant cardamom, put in a cloth bag, tied tightly.
  • The remaining spices are finely chopped.

Step 2: Boil the Chicken

  • When the pot of boiling chicken boils, you take out all the foam, then turn down the heat and leave the lid half-closed to prevent the boiling water from spilling out.

Step 3: Cook the Broth

  • Wash the prepared pork or chicken bones and put them in the pot to boil for about 3 minutes, then turn off the heat, take out the bones and wash them again.
  • Add the pork or chicken bones to simmer again. Note that you should not cook with too much fire because that will make the water cloudy, not clear.
  • When the bones are soft, pour the previous chicken broth in with the pork bone broth that has just been simmered. At the same time, add a cloth bag including star anise, dried cinnamon and cardamom to simmer for 20 minutes, then remove this bag.
  • Add young eggs, poached chicken intestines, then season to taste.

Step 4: Present and Enjoy

  • To enjoy, you need to blanch the rice noodles with boiling water and drain.
  • With the boiled chicken you tear or cut into bite-sized pieces.
  • When eating, you take the right amount of pho noodles in a bowl, arrange shredded chicken, young eggs, chicken intestines and sliced onions on top. Then, you add coriander and pour just enough broth.
