Vegetarian Noodle Bowl Recipe

Vegetarian Vemicelli


For the Noodle Bowl:

  • 200g rice vermicelli noodles
  • 1 cup shredded lettuce or mixed greens
  • 1 cucumber, julienned
  • 1 carrot, julienned or shredded
  • 1 cup bean sprouts
  • 1/2 cup fresh herbs (mint, cilantro, basil), chopped
  • 1/4 cup crushed peanuts (optional)

For the Vegetarian Protein:

  • 200g firm tofu, pressed and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger

For the Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced


Prepare the Noodles:

  1. Cook rice vermicelli noodles according to package instructions. Drain, rinse under cold water, and set aside.

Prepare the Vegetarian Protein: 2. In a bowl, combine cubed tofu with soy sauce, sesame oil, minced garlic, and grated ginger. Let it marinate for 15-20 minutes.

  1. In a pan, sauté the marinated tofu until golden brown. Set aside.

Assemble the Noodle Bowl: 4. In serving bowls, arrange a portion of cooked rice vermicelli noodles.

  1. Top with shredded lettuce, julienned cucumber, julienned or shredded carrot, bean sprouts, and chopped fresh herbs.

Add the Vegetarian Protein: 6. Place the sautéed tofu on top of the noodles and vegetables.

Prepare the Sauce: 7. In a small bowl, whisk together soy sauce, lime juice, sweet chili sauce, hoisin sauce, sesame oil, and minced garlic.

Drizzle with Sauce: 8. Drizzle the prepared sauce over the assembled noodle bowls.

Garnish: 9. Garnish with crushed peanuts if desired.

Serve: 10. Toss everything together before eating and enjoy your flavorful Vegetarian Noodle Bowl!
